BLACKBERRY SYRUP

Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 3 Cups Fresh Blackberries
  • 1 1/4 Cups Sugar
  • 1/4 Cup Light Corn Syrup
  • 1 tsp Corstarch

Instructions

  1. Process blackberries in a blender until smooth.  Be sure to scrape down the sides.

  2. Pour mixture through a fine wire-mesh strainer into a medium saucepan, discarding solids.

  3. Stir in remaining ingredients and bring to a boil over medium heat, stirring occasionally.

  4. Boil for 1 minute stirring occasionally.

  5. Remove from heat and let cool.

  6. Serve with cobbler, pound cake, fruit, pancakes, or ice cream.

BLACKBERRY PIE

Prep Time 20 minutes
Cook Time 45 minutes
Total Time 1 hour 5 minutes
Servings 8

Ingredients

  • 2 Crust Pie Dough
  • 4 Cups Fresh Blackberry
  • 1 Cup Sugar
  • 1 1/2 tbls Lemon Juice
  • 1/2 tsp Cinnamon
  • 2 2/3 tbls Quick-cooking Tapioca
  • 2 tbls Butter

Instructions

  1. Sprinkle sugar, lemon juice, cinnamon, & uncooked tapioca over blackberries and stir until will blended.

  2. Let mixture stand for 15 minutes.

  3. Preheat oven to 450 degrees.

  4. Turn the fruit mixture into the pie shell and dot with butter.

  5. Cover the top with well-pricked crust top or lattice.

  6. Bake the pie at 450 degrees for 10 minutes.

  7. Reduce heat and then bake for 35 to 40 minutes or until golden brown.

SOUR CREAM BLACKBERRY PIE

Ingredients

  • 1 Graham Cracker Crust - Chilled
  • 3 Eggs
  • 3/4 Cup Sugar
  • 3/4 Cup Sour Cream
  • 2 Cup Fresh Blackberries

Instructions

  1. Preheat oven to 350 degrees.

  2. Beat eggs.

  3. Add remaining ingredients and stir.

  4. Pour into pie shell.

  5. Bake until custard is firm or about 1 hour.

  6. Serve hot or cold.
